Happy Bloggiversary to me, Happy Bloggiversary to me!!  So, is it bad when you miss your own Bloggiversary?! Danica’s Daily (DD) was officially 1 year old yesterday ~ Yeahhhh!!!  It’s crazy to think it all started with one reader (my friend!) and THIS POST! This year has flown by yet, it honestly feels like DD is much more grown up than one year, LOL.  Anyway…just had to share my excitement with all of you…..now Danica’s Daily is officially going on TWO YEARS (The Husband always teases me for saying it like that, but, it’s true, I am now in year two). :)

Today is the beginning on a bunch of NEW Breakfast ideas thanks to all of you!  I was really excited for my breakfast this morning (woot woot!) ~ a first in a really long time – yeah!

You all might think I went a little bonkers with my wafflewich and mixed up your ideas, but, I put together everything that sounded good ~ sweet, salty and savory all in one.

I started with TWO toasted Kashi Strawberry Flax Protein Waffles (I would’ve used plain but this is what I had).  Then, topped then with 1/3 c of Egg Beaters seasoned with PINK SEA SALT  & Freshly Ground Pepper.

* I cooked my eggs in the microwave in a bowl sprayed with nonstick spray for 1 minute – so easy!

Add TWO slices of Trader Joe’s LEAN turkey bacon.

Plus a drizzle of my FAVORITE Maple Syrup ~ 100% PURE (and sometimes Organic) from Trader Joe’s.

Add my other waffle top to make a perfect hat to this 4.5 point sandwich!

Slice in half and DIG in!  It was interesting ~ I have to say this is the first time I’ve had my eggs sweet.  Sure I’ve dipped bacon or sausage in syrup, but, this was something new, something DELICIOUS!

My breakfast ROCKED at keeping me full for hours ~ I really think it was all the protein and fiber.  I was not hungry before my run and I wasn’t starving after which usually happens if I skip my AM snack.  I eat breakfast and lunch about 5 hours apart.

The weather outside today was AMAZING ~ warm, sunny and totally spring like.  I LOVE the pink flowered Cherry Plum trees ~ they smell like Spring and I focused on them the entire time during my 4 mile run.  Oooy, my legs were so tired and I ran so slow, but, I DID it!

When I got back, I whipped up a quick and easy lunch.  I used my Eat Smart Pro Precision Scale to measure out everything you see in my sandwich below this morning.

2 slices TJ’s Sour Dough (all out of my usual)

1 1/2 oz each of LEAN Honey Roasted Turkey & Ham

1 oz PepperJack Cheese

PICKLES

Made In Naple Spicy Apple Ginger Mustard

Totally worth all 7 points!  For some crunch, I had a side of snap peas.

IMG_9841

Plus a pear for dessert all washed down with an Acai Tropical Sobe Vitamin Water.

I LOVE the 1950’s plates we have at work so today I had to use one.  I couldn’t resist having real crunch, so I hit up my co-worker for some of those totally addicting Olive & Rosemary Triscuits (6 for 2 pts).

When snack time rolled around I wasn’t super hungry, but, I wanted something sweet.  I grabbed a pack of Annie’s Organic Sunny Citrus Bunny Fruits for 1 point.  The perfect cure all for my sweet fix!

I was a little hungry while cooking dinner, so I decided to snack on a 1 point Low-Fat Sargento Cheese to tied me over.  I LOVE cheese ~ it counts as a dairy serving and well honestly it’s good straight up or on top of things :D

Dinner was SIMPLE, yet AMAZING and earned me some serious brownie points!!!  I LOVE my grill and I cook on it year round even if it is raining outside.  I marinated a Tri Tip in Trader Joe’s Island Soyaki yesterday so it would be LOADED with flavor when I grilled it today.

I measured out 4 oz of Teriyaki Tri Tip (4 pts) – oz for oz it’s 1 point since it’s a LEAN cut!

Plus 1/2 cup Healthier Potato Salad (2 pts)

IMG_9857

A BIG Ole Artichoke (0 pts)

with artichoke jalapeño dip for dipping.  Do you think the artichoke noticed the cannibalistic action? :D   I really only ended up using it on the heart – so good! (1 pt per Tbsp)

I have an AWESOME dessert planned for during The Bachelorette Tell All so if I have it, I WILL BE BACK with pictures :D
